This is a great way to use your ramps, bulb to greens!

 

Treat them exactly as you would traditional pickles, capers, or pearl onions. Great to add to your charcuterie boards, relishes, sandwiches, or on top of salads.

Ingredients

  • Glass Mason Jar

  • Ramps - trimmed to just bulbs

  • White Vinegar - 1 Tablespoon

  • Purified Water - 1 Cup

  • Granulated Sugar - 1 Tablespoon

  • Granulated Salt - 1 Tablespoon

  • Pickling Spice - 1 Tablespoon

Directions

  1. Cut greens off the top of the ramp, and trim off roots at the bottom of the bulb

  2. Fill your glass jar with trimmed ramp bulbs, then add 1 Tablespoon of your favorite pickling spice over the top

  3. Boil water, vinegar, sugar and salt over the stove until all granules are combined with liquid

  4. Pour hot liquid over the ramps and make sure they are fully submerged (make more pickling liquid if needed!)

  5. Add lid tightly to the jar while liquid is still hot, and let cool on your countertop

  6. Once fully cooled, transfer jar to fridge and use within two weeks!
